Gazpacho Soup is quick, easy, and yummy.

Basic Gazpacho Soup

This is my Mom's recipe and it is fast, easy, and delicious. There are ump-teen ways to jazz it up if you're so inclined, but it really is great just this way. Garnish with diced cucumber, green peppers, avocados, or seasoned croutons.


In a blender, buzz:



2 tomatoes, quartered
1/2 cucumber, chopped
1/4 green pepper
2 Tbs. each chopped onion, olive oil, and vinegar
1/2 clove garlic
1 Tbs tomato paste
1/2 tsp salt
4 drops liquid hot pepper sauce
1 1/2 C tomato juice

Chill at least 6 hours before serving.
